I think you are overthinking this. I would recommend just addressing it to the partner and mirroring the salutations the partner uses in their instruction email. For example, in an AC i was successful in, the partner used “hi/ many thanks” so I used the same. Unless you are instructed otherwise...

The SJT is quite reasonable. I would do the practice test beforehand to get a feel for the type of questions you should expect. RE the numerical reasoning, yes there are numerical reasoning questions. They aren’t particularly difficult, but I would suggest that you have a calculator at hand x
Yes, but you applied at the end of September which is not that long ago. To be fair, there was someone else on here who also applied at the end of September and received a PFO about a week after. However since you haven’t received one, I would say no news is no news at this point 🙂
