Addressing the cover letter to Graduate Recruitment should be enough in terms of formatting. That being said, I know Kirkland only look at direct training contract applications once they have had their vacation schemes and they do tend to fill the spaces from those schemes given their small intake - in some cycles they have made direct training contract offers to those who have applied through the vacation scheme route.
