Unless there are terms in either your VS or TC offer that stop you from doing the vacation scheme because you have accepted the TC, you can choose to do the VS should you want to.
I would say most firms have some paralegals. Few have dedicated recruitment programmes for them though - most firms will just recruit paralegals on a on-demand basis for individual departments, especially within London.
