Any interests that don't require you to make a commitment to others. For instance, it could be hobbies that are very much from a self-interest point or activities that are solo pursuits or where the output is really only for your benefit rather than other people's.
Don't put your extracurriculars in your work experience entries. These should be saved for the sections mentioned above.
Any cross over between these questions and the "why me" part of the cover letter - let the questions focus on your responsibilities and achievements and let your cover letter...

I wouldn’t expect you to be able to talk about another M&A matter. It’s more about thinking about how general macro level trends, as well as things changes in things like regulation might be changing or influencing clients’ business operations or concerns.
You typically have to provide another form of proof of employment. For instance, I have had to provide either my corporate tax returns, bank statements, or even a reference from my accountant. Any formal document that shows income is likely to be sufficient.

Highly unlikely to be an issue - but I would make sure it is listed on applications/CVs as 3-4 days either by using appropriate dates or by saying something like “this 3 day programme” in the description.
