There is no need to do this. The question is assessing your knowledge of how law firms operate/how lawyers work, not how you have demonstrated that quality.
I personally would recommend something the firm did rather than a specific client. You need to take it from the point of the firm rather than the in-house team.
Back in the day it used to be about 3 invited to AC candidates to 1 VS vacancy. That doesn’t account for people not taking up the offer to attend the AC or people who withdraw from the process or decline the VS offer though.

It doesn’t have to be practice areas, your interests can be sector based. I would look at their website and they divide their work up by services (practice areas) and sectors. Choose what genuinely interests you most/you most curious about.
