Freshfields is okay, I personally used it too last year and my application got through the next stage so it is safe to say that it is okay to address them as Freshfields.

It is really difficult to say and it depends on whether the application is rolling or not. If it is not, then I personally used to assume it was a rejection (and I was right), however, if the application is rolling, you never know so I would not lose hope.

Yes, the order does not really matter as long as you cover everything they want you to. I used the exact same structure you want to use and I got through the next stage last year so do not worry!

I personally think that there is nothing wrong in using the same answer in a video interview, especially because saying an answer out loud may sound completely different from reading it. The questions are not the exact same as the applications most of the time but they do have common undertones...
