Personally, I've always written in sentences that are relatively concise and use simple terms. I find it allows the email to be somewhat structured and neat. But I think it is up to you - as long as the email is easy to understand and structured, I'm sure it's fine.

I got a call re VS offer yesterday, but I havent received an email confirmation, is it normal for firms to take a while to send out the confirmation in an email?
Yes - can easily take 7-10 days for written offers to go out. I'd say 2-3 days is more common, but often there is a process chain for these offers to be approved and given it is half term for some people, it could easily be stuck in an approval queue until next week.

    I know some people who have applied for TCs after getting PFOs for vac schemes. I think as long as you don't make them as a last resort (as this will be evident) and you go through the process of an Open Day/getting to know the firm etc. then it's definitely worth it if you can make the time. Grad recruit at various firms have said they won't view TC applicants negatively if they were rejected for the vac scheme that same cycle (Farrer, for example).
