I have failed to convert two vacation schemes in past cycles based on very fine distinctions - I was wondering what graduate recruiters would think of me now?
I haven’t secured a paralegal or assistant position either despite many CV adjustments.
I have been unemployed for 3 months now and can’t stay living like this.
Anyone been in a similar position before? I need some hope.

I was actually in a very similar position, so I completely understand how you are feeling.
I completed three vacation schemes in my final cycle and unfortunately didn't convert any of them, and at the time, it was really difficult not to question whether graduate recruitment teams would see that negatively. However, I went on to secure a training contract through a direct TC application I made in the same cycle following those vacation schemes (so there is absolutely still hope!).
From what I have gathered, firms know that vacation scheme conversions can come down to very fine margins, and not converting doesn't mean that a candidate wasn't a strong performer. It doesn't automatically mean that you are not capable of succeeding elsewhere, and another firm may see strengths that a previous firm didn't. Sometimes it really comes down to things like fit and timing, rather than ability and skill.
I also wouldn't be too discouraged by the lack of paralegal opportunities (although I appreciate that is easier said than done). The market is incredibly competitive at the moment, and many strong candidates are finding it difficult to secure roles despite having solid experience and making lots of CV improvements.
I know it is hard when you are in the middle of it, but your current situation doesn't define how the next cycle will go. I'd keep applying, ask for feedback where you can, and don't assume those previous outcomes will be held against you. As long as you can show that you have taken on any feedback given post-VS and the steps you've made to address it, most graduate recruitment teams will be understanding.
