There is not really any difference between a legal internship and a vacation scheme apart from the name. It sounds like you have enough legal experience and a lot of non legal work experience and so I would say you should have no hesitations in applying for TC/Graduate Solicitor Apprenticeships

You won’t have to list individual assignments, just the overall module grade.
One 2.2 grade is not going to be detrimental L, especially if your other grades are 2.1s and firsts.
I don't think you need to be concerned. I would just contact your point of contact in HR/Graduate Recruitment and ask when you could expect a written offer to be sent to you.
It’s not going to piss them off - the worst that is going to happen is they don’t have any other availability for alternative dates. But you are not going to anger them by asking in case they do have alternatives.

I’d point out the error as soon as possible as this will have potentially been viewed as a year long internship rather than one for a couple of weeks. It is bound to be seen as an innocent typo/error though if the day and month are correct and the year is just out by one digit on the keyboard.
