I would track down any Singaporeans working in a similar practice area and now working in the U.K. to ask them about their experiences. Recruitment agencies will be slow to come back and can often be vague with their feedback anyway. Finding out how people made the move is probably the best way...
Just first name is appropriate - we don’t really use Mr/Mrs etc in a work environment unless it’s for client correspondence and even then, it’s not always used
I would still apply - the recruitment process are very different. Firms can be quite particular with paralegal roles, and it’s highly likely what they are looking for will be different to a training contract role.
Really pleased the VS firm are showing you the flexibility and understanding - this to me says a lot about the firm. That type of attitude is likely to transfer across other aspects of your training.
My approach would be to try and call and see if you can get hold of someone - it really isn't an issue to try and call them, it is just whether someone is available (you don't need to call to arrange an appointment).

It really depends how much time you want off and when it is. Taking certain time off from vacation schemes is going to negatively impact your scheme - for instance, all it takes is for there is to a form of assessment on the day...

I'd give it until the end of the week and then I'd give the firm a call on Friday and explain you haven't received anything yet, and so you just wanted to check whether you had missed the correspondence or if there was a timeframe you should expect the contract/offer letter to be with you.

If you are not 100% certain, then I would just do the scheme and not say anything to either firm (unless you need to disclose for conflict check purposes/are asked directly).
I don't think anyone has this particular specialism of particularly working with career changers - if there are some out there, unfortunately I am not aware of them.
Unfortunately, I don't know of any recruiters who have this particular specialist, but even more so for law.
I suspect the reason might be that there isn't really a particular type of role that could be leveraged for TC applications - pretty much any role can be leveraged from my experience.
