It will be varied combinations, but each firm will have their own emphasis. For instance you could face very similar questions for different firms, but they could be looking for the opposite combinations - so there isn’t really an “industry” standard, just individual firm standards.
I’d aim for as close to 600 words as possible. Use the STAR method to explain key achievements in those activities and you’ll get to the 600 word limit.

If the firm has a compulsory PE seat, then it maybe something you want to still reference. You don’t necessarily have to say you are interested in it, you can frame it more that you are looking forward to experiencing it through the TC.
I think your approach is the right one. Your application will become very long if you included them all as individual entries, and a firm is probably much more interested int he part time job you did than the open days you have been to, so I wouldn’t want some open days to supersede a part time...

Generally no, personal statements aren’t necessary. Sometimes people like career changers might benefit from one, but that’s only when they aren’t applying with a cover letter or other application questions. If you are applying with either of these, then you don’t need a personal statement on a CV.
If you were asked to provide this information on the application form but didn't, then include it in your thank you. Something as short as “Should you require details of my referees, please see the below as I did not include these in my application at the time of submitting”
Not necessarily unfortunately - other work can mean it’s not a priority. They also don’t like to reject immediately because you can get a lot of strong reactions from people when doing so. I’d say between 3-7 days after interview is more likely.
You can do, but I’d personally save this for another section, like “any additional information”, a “why law” question or something like a cover letter.
They will typically reject those who didn’t meet the criteria outright. They may hold some candidates on “hold” who met their criteria but weren’t the strongest candidates, while they wait for the strongest candidates to accept/decline offers.
