In a cover letter, is it okay to mention your completion of another firm's Forage course as a means to emphaise 'why law' and attest to your interest in a certain area of law?

Yes - that is fine to reference the programme.

Writing to a firm to change the schedule from a winter wvs to spring or summer after accepting an offer with them feels so embarrassing...

Lots of people do it each year - the worst that will happen is the firm says no, and then you are in no different position than you are now.

Just do it, there really is no way to practice it as it's strengths based!
