Unfortunately this data isn’t really stored anywhere but can change year on year anyway - so I wouldn’t worry about it too much. Also conversion rates do not tell you how many people decline the offer, so things can be a little deceptive even if you do find them.
I would wait until you are offered. They will have clocked you are in your final year and therefore could start earlier.
When you do raise it though, rather than saying you would like to start your TC in 2025, ask whether there is any opportunity to start in 2025.

No difference between the two and so if the second scheme works better for you state your preference for this. However, if you can still do the first scheme, explain this is possible but that you would prefer the second.
I wouldn't expect this to be the case as this information is generally not compulsory (you wouldn't have been able to proceed with your application if it was), and for many applicants the questions are not as relevant anyway (e.g. international students).
Yes - it is okay to include those. If there is a "careers events" section, then move the open days/workshops to that section though and remove from your work experience.
Voluntary toles are ok to include in a work experience section too.

If you have 12 work experience entries, definitely don't add your extracurriculars to this section.
Some firms do not care about extracurriculars - it just isn't important to them, and so forcing it into other sections can work against you.
Plus you have lots of work experience to leverage...
