I would submit any way - the reference part can be dealt with at a later stage. References are a painfully slow process anyway and so I wouldn't let hearing back hold up submitting your application.

Possibly, but thats a lot of work to do when reviewing one application, so I feel it is unlikely at an application stage. Might check it after an interview. They will check by name if they do.

I would just email them and ask for an extension. You might find the test is still live on Monday/Tuesday anyway, and if so you could just complete it then.

I personally wouldn't get too caught up on this. It can fluctuate from scheme to scheme even with the same firm, especially once you factor in people declining offers too.
Some people might perceive you as such, but that’s all it is, a perception. I’d just be selective with who you request calls with and make sure the message to them is tailored to them with purpose as to what you want to talk about and some form of reference why you have asked them.
I'd personally suggest keeping it to the full name as its not like the firm uses the abbreviation/acronym and it isn't shortened in things like its Chambers Student Guide profile.
It could be highlighting any skills, knowledge or motivations gained from the experience that have helped you with your personal development/pursuing your career path.
