Academic references are notoriously slow at the best of times, so I am sure this won’t be a problem. But you can let the firm know about the strikes and ask if there is any alternative information you can provide in the absence/delay of the references.
For many firms, unfortunately not as there would not be enough time to bring someone on to a GDL course that September. Some firms do though, its worthwhile checking with each firm's eligibility requirements.
I wouldn’t necessarily make pre made answers. You really have to listen to the detail of the individual scenario and make a judgement on how you would react based on that information. Preparing set answers means you may not tailor your answer to the specifics of the scenario.

Yes - a deadline will always include the day of the deadline. When that deadline is though could be 5pm as some firms may turn off applications at the end of the working day.

You will need to find firms running later schemes or speak to the firms to see if there is any flexibility with the vacation scheme dates (eg could you start a week later or only attend two days in the first week).
There can be lots of different factors that means it can vary even within a recruitment cycle for the same firm.
Personally, I’d just wait until you get the offer and then negotiate that period if necessary.

I personally think these sections at least need to be refined slightly, especially the why you part.
Firms will value different things in trainees and there a standardised approach may not demonstrate the specific skills or qualities an individual firm is looking for.
