I think different people view answers to these questions differently, and that's because they're not all looking for the same sets of information from them. You have to try and gauge the level of detail you've been asked to provide depending on the context in which you've been asked a question...
I would focus on resting and recuperating for now. If you still feel ill Monday morning, email grad rec first thing explaining your situation and try to get them to shift your AC to a later date if at all possible.
If they are not able to shift your AC, keep resting and taking care of yourself...

There are a few ways to do this- you could invest time in lateral hiring to enhance your sector expertise, as @Asil Ahmad said you could increase and strengthen your ESG focus, you could come up with partnerships that highlight your environment+ESG focus etc.
You have to gauge this depending on social cues, the circumstances in which you've been asked the question and the level of detail your instinct tells you to go into.
If the question is generic, don't go into all the detail you can provide so that the interviewer has the chance to ask you...
You could try doing the SQE and applying for NQ roles or shifting laterally, whatever brings you the most luck. You'll still be UK qualified even if you don't find a job straight away here and that could be a huge advantage if you have to go back to your home country for a short while you look...
Follow your instinct with this and at the same time err on the side of caution because you will not be able to pick up on social cues in a VI to know whether your joke will be received well or not.
Prep for the VI and call them on Monday to confirm the status of your app- if they said you're through to VI, then you will have prepped for it. If they say no, then you would've brushed up on your VI prep for future applications.

I would encourage you to apply for direct TCs with the experience you have, especially if you feel they're better suited to your background, however, please know that they're not easier than VS apps.

Hi @Internationalsolicitor! I wonder whether you're technically considered overqualified for a training contract if you've already qualified and worked for 2 years after that in your home country. May I ask why you aren't keen on applying for jobs as an associate?
