The firm name and the title of the event are going to be of interest, as well as what you personally gained from attending them. You don’t have to detail what the event consisted of unless it’s relevant to what you gained.

There is no issue with asking the firm to confirm what exercises you will complete - so I would encourage you to contact them and ask for further details about what to expect from the assessment centre.
I would personally suggest highlighting the specifics of the open days, insight schemes and virtual experiences you have completed. But the rest of your approach seems very sensible/logical.
