I think it is fine for these to be blank but you need to have strong evidence elsewhere that you have strongly considered and pursued opportunities to understand the career and prepare for it.

Yes - they will have had this happen all the time even outside of Christmas. Some referees never get back to reference requests.
You just need to ask whether:
1) it can wait until the new year
2) if not, is there any other information you can provide as an alternative.
It sounds like the firm won’t get the reference until the New Year, and so I don’t think it’s a case of asking whether they have received it, more that is receiving it in the new year ok, and if not is there any alternative information/referee details you can provide instead.

The SQE is likely to be more difficult to pass based on the assessments it is designed from. Although we haven’t seen anyone pass the SQE yet (won’t until mid 2022), the assessments are very similar to the QLTS which has some pretty low pass...
If this firm is a strong contender for you - for instance it is in the top five-ten firms you would accept an offer with, I would apply anyway.
Most applicants won’t apply until the last week (and even the last few days), and even then some of those people are bound to be selected to the next...
The module newsletter sounds like extra curriculars. Volunteering is more of a grey area as to which category it falls into. Ultimately if it’s attached to the university, technically it would be considered extra curriculars, but such roles are ok to put in work experience sections.
I’d really advise against this. There will be slight differences I suspect in the work or team and also the impact you will have in the roles, and so I would focus on those differences.
You can ask for an extension if you are ill. The worst that can happen is they say no to the extension, so you won’t be in any worse of a position than you are now.
They may not even have your old application if their data retention policy means they would delete the data within a set period of time and that time has expired.
