I definitely wouldn’t put extra curriculars in work experience, but it might be worthwhile checking with the firm as to what they personally advise. It maybe that they don’t care for extracurriculars in the selection process though.
Most of them have transferred internally within the firms they work for rather than apply externally. I wouldn’t expect many external roles to come up specifically for an English qualified lawyer in New York, and if it was, in those instances you’d most likely need to be dual qualified.
I personally wouldn’t put open days or Forage programmes in work experience. I think they are better suited to other sections of an application form. However, if you feel there is no place to detail them, then include them in your work experience section, but maybe put them as a collective entry...

How long you want off
What time you want off (start of the programme is pretty difficult)
What you want the time off for
How long the vacation scheme is (if it’s less than 2 weeks, you won’t even accumulate annual leave).
